Crispy Fish Cubes in Creamy Salted Egg Sauce

Salted egg sauce is very easy to make. Also, you can be creative on it by adding some herbs that you like. Oregano, chili powder, or curry leaves may be some options of spices to be added to the sauce. Chicken egg yolks are used in this recipe. However, if it is available, egg yolks from duck eggs are recommended. Besides the creamier texture would be, the duck egg yolks also provide a brighter yellow color that surely enhances the tempting look of the sauce.

Cooking Time: 30 minutes


Ingredients:

  • 1-½ lb. fish fillet
  • 1 egg
  • A pinch of salt
  • A pinch of pepper
  • 1-cup rice flour
  • Vegetable oil, to fry

The Sauce:

  • 1-tablespoon margarine
  • 1-teaspoon minced garlic
  • 4 salted egg yolks, mashed
  • ¾ cup fresh milk
  • A pinch of salt
  • A pinch of pepper

Instructions:

  1. Cut the fish fillet into small cubes. Then, set aside.
  2. Crack the egg then season it with salt and pepper. Whisk until incorporated.
  3. Dip the fish cubes in the beaten egg and roll them into the rice flour. Make sure that the fish cubes are entirely coated with the rice flour.
  4. Preheat a frying pan over medium heat. Pour vegetable oil into it.
  5. Next, once the oil is hot, put the coated fish cubes into the frying pan and deep-fry them until light golden brown.
  6. Take the fried fish cubes out of the frying pan and strain the excess oil.
  7. Next, preheat a saucepan over low heat then melt margarine in it.
  8. Once the margarine is melted, stir in minced garlic and sauté until wilted and aromatic.
  9. Pour fresh milk together with mashed egg yolks into the saucepan then season it with salt and pepper. Stir and bring it to a simmer.
  10. Remove the sauce from heat and drizzle it over the fried fish cubes.
