Fish Crispy Garlic with Pineapple Tamarind Sauce

Many kinds of the fish fillet can be used for this recipe. Salmon, dory, snapper, and much more fish with soft textures are perfect for this crispy fish. If you want to enjoy it right away, simply drizzle the sauce over the fried fish while it is still hot.

However, if you want to bring it for lunch at the office, make sure that you store the fried fish and the sauce in different containers. Besides, this helps to keep the fried fish crispy; it also maintains the freshness of the fish and sauce.

Ingredients:

  • ¾ lb. fish fillet
  • 1 fresh lime
  • 2 eggs
  • 1-cup multi-purpose flour
  • ½ cup rice flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon baking powder
  • Vegetable oil, to fry
The Sauce:
  • 1-tablespoon vegetable oil
  • 2 tablespoons diced onion
  • 1-teaspoon fish sauce
  • 2 tablespoons oyster sauce
  • ¼ teaspoon sugar
  • ½ cup diced red bell pepper
  • ½ cup chopped pineapple
  • 1 cup unsweetened tomato juice
  • ½ cup of water
  • 1-tablespoon cornstarch

Instructions:

  1. First, cut the lime into halves then drizzle the juice over the fish fillet. Let it rests for approximately 10 minutes.
  2. Second, in the meantime, preheat a skillet over medium heat then pour 2 tablespoons of vegetable oil into it.
  3. Next, once the oil is hot, stir in diced onion and sauté until aromatic and wilted.
  4. Add chopped pineapple and diced red bell pepper to the skillet and season it with fish sauce, sugar, and oyster sauce.
  5. Pour tomato juice and water into the skillet then bring it to a simmer.
  6. Take about 3 tablespoons of the gravy and mix it with cornstarch.
  7. Return the cornstarch mixture to the skillet then cook it until thickened.
  8. Remove from heat and let it rest.
  9. Next, combine the multi-purpose flour with the rice flour then season the mixture with salt, pepper, garlic powder, and baking powder. Mix well.
  10. Crack the eggs then beat until incorporated.
  11. Cut the fish fillet into cubes then dip them into the eggs.
  12. Roll the fish cubes into the flour mixture and make sure that the fish cubes are completely coated with flour.
  13. After that, preheat a frying pan over medium heat then pour vegetable oil into it.
  14. Once the oil is hot, put the coated fish cubes into the frying pan and fry them until golden brown.
  15. Take the crispy fried fish out of the frying pan and strain the excess oil.
  16. Then, place the crispy fried fish on a serving dish and top with the sauce.
  17. Serve and enjoy.
